Thai Red Curry with Tofu, Mango, and Snow Peas



A great quick fix with a lot of fresh ingredients and the cooking time is less than 20 minutes. 

Make sure you are not cooking the ingredients longer than necessary. This is especially important for the snow peas as you want to avoid them to turn out too soft. The curry does not have a lot of gravy, but just enough to coat the ingredients. The curry pairs greatly with brown rice.

After the tofu is drained, cook until golden brown.
Add onion and garlic to the pan. Cook for one minute.
Add the snow peas and cook another 30 seconds.
Add the coconut milk, red curry paste, and sugar.
After about 2 minutes add the tofu, mango, cilantro, peanuts, and lime juice.
Cook until heated through.


Thai Red Curry with Tofu, Mango, and Snow Peas

Serves 4.


Ingredients:

1 (15 ounce) package extra-firm tofu, drained and cut into 1/2 -inch cubes

2 tablespoons canola oil

Salt to taste

1 medium red onion, sliced into thin half-rings
 
2 large cloves of garlic, finely chopped

 
2 cups snow peas, trimmed

1/2 cup light coconut milk

1 to 2 teaspoons Thai red curry paste, or to taste

1 teaspoon light brown sugar

1/4 cup coarsely chopped salted peanuts

1/2 cup chopped fresh cilantro


1 to 2 tablespoons fresh lime juice


Preparation:

 

Drain the tofu between two plates for 15 minutes or up to one hour. Place a weight, for example a heavy can, on top of the upper plate. When drained, cut into 1/2 - inch cubes.

In a nonstick skillet add 1 1/2 tablespoons of the oil and cook the tofu over medium heat for about 5 minutes. Turn on the other side and cook for 5 additional minutes, or until golden brown. Transfer to a plate.
Heat the remaining oil and add the onions and garlic. Cook for about one minute.

Add the snow peas and cook for 30 seconds.

Next, add the coconut milk, curry paste, and sugar and mix well. Bring to a simmer and cook for 2 minutes. 


Reduce the heat to low and add the tofu, mango, peanuts, cilantro, and lime juice. Cook until heated through.

Serve immediately with rice of your choice.
